Valentines – Jam Heart Shortbreads










What better way to show someone you love you love them by baking these delicious home-made Jam Heart Shortbreads.  I made these with my daughter yesterday and they were so much fun and so quick to make.  Here is the recipe for you to try:

Makes approx 40 biscuits

  • 250g  butter, softened
  • 1 cup icing sugar
  • 1/4  cup orange juice
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 1/2 tsp baking powder
  • 3 cups plain flour
  • 1 cup (strawberry or raspberry) jam

Preheat oven to 170°C.  Line 2 baking trays with baking paper.

Using a mixer, cream the butter and icing sugar together.  Add the vanilla and egg yolk and then the orange juice, mix well.

Add in the sieved flour and baking powder and mix until mixture becomes like a soft dough.

On a floured surface mix dough using your hands by adding a little flour if necessary.  The dough should be firm enough to roll out but not too dry.

Roll dough out using a rolling pin to approx 1/2 cm thickness.  Using a heart cutter cut out a base and a top.  The base should be left whole but the top should have another small heart cut out in the centre.

Once you have used all your dough to cut out a top and bottom bake for 8-10 minutes until biscuits are golden brown.  Transfer to a wire rack to cool.

Once cooled use a knife to place approx 1/4 teaspoon of jam in middle of base biscuit.  Spread slightly and place the top biscuit (with cutout) on top.  Repeat until you have used all your biscuits.

Place biscuits back in the oven for 3 minutes to set jam.

Allow cool and then ready to give to your loved ones.
